Shrikhand Sweet is popular desi mithai/dessert from Gujarat and Maharashtra.
It is an irresistible assortment of silky smooth yogurt, a hint of Kesar(Saffron) & Elachi (Cardamom) flavouring, and a crunch of dry fruits.

Steps

Soak 7-8 threads of saffron in 1 teaspoon of luke warm milk for 2- 3 hours.

Hang 1kg yogurt in a muslin cloth for 3-4 hours so that all the liquid is removed from it. From 1kg yogurt to get around 400-500 grams of Mattha (Try to use fresh homemade yogurt. It should not be tangy. If using store-bought yogurt, make sure it’s fresh)

Now grind 1 cup sugar with 6-7 elachi

Once the mattha is made, take it in a mixing bowl. Whisk it thoroughly so that no lumps are there in it (if required you can even sieve it too as we require the absolutely silky smooth texture)

Add 1 tablespoon of fresh cream this would increase richness as well as correct consistency of shrikhand. (You can use milk if you want to avoid cream)

Add powdered sugar & elachi, mix well.

Muddle saffron threads in the milk (Refer Step-1) so that it releases its beautiful aroma, flavour and colour. Add that in the yogurt mixture.

Chill Shrikhand for 2-3 hrs, garnish with dry fruits of your choice and crushed dry rose petals (optional)
