Ingredients

Adjust Servings:
150gm Basmati Rice
1 Carrot
1 Capsicum
1/4 cup Sweet Corn
4-5 Coccinia
1 Onion
1/4 cup Peas
1 Potato
As per taste Salt
1 tbsps Garam Masala
1 tbsps Cumin powder
1 tbsps Coriander Powder
3 tbsp Oil

Veg Pulao - A quick nostalgic tour into my childhood. The aroma of fresh spices in harmony with flavours of fresh vegetables can sure cheer anyone up.

Steps

Done

Wash all your vegetables thoroughly. Cut them into julienne. Keep aside

Wash and soak the rice for 10 mins. In a pot add rice, 2-3 cups water, salt, cardamom, cinnamon stick (small piece), peppercorn (1-2), cloves (1-2). squeeze half a lemon. Let it cook until fully done

Strain out excess water and pour some cold water and strain again. Keep aside **Cold water helps make the rice non sticky and separated

In a wok, heat half a tbspn of oil. Add one vegetable at a time and let it roast for a good 3-4 mins on medium to high flame. Add a pinch of salt, cumin powder, coriander powder, and garam masala. once roasted transfer to a bowl.

Repeat step 4 for all vegetables. ***one may use any veggies available at home.

Finally mix all vegetables and the rice together in a wok. Place over low heat and give it a good mix. Enjoy the subtle flavours.

Serve with Raita.
