Ingredients

Adjust Servings:
1/2 cup All purpose flour (Maida)
1 cup SEMOLINA[RAVA]
1/2 cup Wheat Flour
1/4 tsp Baking Powder
5 cups Oil For frying
1 tbsp Chaat Masala sprinkle
1 cup curd For chaat
1 cup Chickpeas boiled
3 tbsp Oil

Raj Kachori

Raj Kachori is filled with various flavours as sweet, spicy, cruncy etc.. It is crispy from outside and soft from inside. Here I am presenting two ways one original and other one healthy ……..

Steps

Done

Mix wheat flour, semolina , Maida and baking powder and mix well.
Add 3 tbsp oil and mix well.
Add water gradually and make soft and smooth dough.

Keep the dough aside for 20 minutes.
After 20 minutes knead for 2-3 times.Divide the dough in the small ball into 15-18 balls.

Roll all balls into a puri and cover them with the clothes.
They should not be dry.

Heat oil for deep frying

Oil should be hot. Drop one puri in the oil. and Tap with the spatula and when puri become puffed then turn the gas medium and flip the poori, cook it for 2-3 minutes on medium gas.

Kachoris are ready.

Let them cool down completely.

Now the Kachoris are ready.
It is the time for stuffing.
We have ingredients for stuffing.
Break the kachori into middle.

Add 2-3 table spoon boiled Chola and Potato ( as per your taste )
Add 2 table spoon curd, 1 table spoon green chutney, 1 table spoon sweet chutney.
Sprinkle with chaat Masala and Namkin.
as per your taste.

Note :-
1) You can use any thing for stuffing like sprouts, chola etc.
2) While rolling Kachori, it should be thin .
3) While frying Kachoris, it should be fry on low flame for crispy. Otherwise it will soggy like puri
4) For Garnishing, ingredients can be modify as per taste.
