Ingredients

2 large Sweet potatoesCut quarters

2 medium sized Carrotpeeled and cut into quarters

1 small Onioncut into half

3 cloves Clove garlic

1 tsp Oregano

1 tsp Basil

1/4 -1/2 tsp Black Pepper Powder

1/4 tsp Paparika

2 tbsp Scallion/Spring Onion greens

To taste Salt

4 cups Water or Vegetable Broth

1 small Bay Leaf
-
2 tsp Olive Oiland more for brushing
Directions
I wanted to try this roasted sweet potato soup recipe for a long time. One of our friends shared Fresh Sourdough bread loaf with us and it was a perfect time to try this soup recipe.

Preheat the oven to 400°F and line the baking sheet with aluminum foil. |

Sprinkle the oregano, drizzle some olive oil and bake it for 30 mins. |

Now remove it and let it cool for few mins. |

Peel the skin of sweet potatoes. |

Add everything in a blender and grind it into a smooth paste while adding water or vegetable broth. (I have used water, as I didn't have any vegetable broth) |

Heat the pot and add a tsp of olive oil. |

Add the bay leaf and basil |

Now add the puree, the remaining water/broth and salt to taste. |

Bring it to a boil and add the pepper powder |

Let it boil for 3-5 mins. |

If its too thick add more water little by little and adjust the salt and pepper. |

Serve it into a bowl and garnish with paparika and scallion. |
