70g Brown Sugar

7 tbsp Condensed Milk

1/4 tsp Salt

Directions
Barfi is an Indian sweet traditionally made from milk. It’s the Indian equivalent of fudge. There a various types of barfi, such as besan barfi (made from chickpea flour) or Kaju barfi (made from cashews), but all barfis always include milk and sugar. It has a melt in the mouth, crumbly texture and can be flavoured with just about anything!
Walk into any Indian sweet-mart and you’ll always find an assortment of barfis. You can even find a western take on these. I’ve seen Oreo barfis, Caramel barfis and the most popular one; chocolate barfi! It’s become a staple.
I created this recipe because of my love for barfis as well as Snickers; the chocolatey, caramely chocolate filled with salted peanuts. I tested and failed, and tested and failed, and then tested and nailed it. I tried to stay as true to a Snickers bar as I could, but in barfi form of course. My thought process is that the nougat in the chocolate is replaced by the barfi – and there you have it, a Snickers barfi!

Grease a 6 inch stainless steel plate/cake tin with ghee. |

Combine the tin of condensed mik, milk powder and cardamom powder in a microwaveable bowl |

In the mircowave, heat the mixture for 1 minute on 900watts. Stir well and then repeat this step another 2 times. |

Heat for a further 30 seconds and stir well. |

Transfer to the greased plate/cake tin and spread and smooth out till it is covering the whole surface area. Use the back of a spoon that has been greased with oil to help spread the mixture. |

Press in the salted peanuts whilst the mixture is still hot, and sprinkle the rock salt. Let this cool for at least an hour. |

In a pan, combine the sugar, butter, condensed milk, honey and salt. Bring to a boil a keep stirring for 5-7 minutes whilst boiling to prevent it from burning. |

Take the mixture off the heat and stir for a further 3 minutes. The mixture will start to thicken as it is stirred. |

Stir in the Vanilla essence and then pour the caramel over the barfi layer. Work quickly to spread evenly. |

Melt the chocolate in the microwave in 30 second bursts till almost melted. In between, stir the chocolate but be careful not to overstir otherwise the chocolate will be grainy in texture. |

Pour the mixture over the caramel layer and allow to set for 20minutes before transferring to the fridge for 2 hours minimum. |

Cut into desired shapes and sizes using a sharp knife. |
