5 Boiled potatoes

1 tbsp Green chilly paste

1 tbsp Garlic paste or minced garlic

2-3 tbsp Corriander Leaves

1/2 tsp Turmeric

7-8 nos. Curry leaves

1 tsp Black mustard seeds

2 tbsp Oil
-
As per your taste Salt
-
As per your taste Cheese
-
1 bread loaf

4-5 Green Chilli

3-4 tbsp Butter
Directions
Mumbaikars like me love vada pav and so I tried making a different variant – Vada Pav Bruschetta which turned out to be amazing.

1. In a Wok - Take oil and heat. add Mustard seeds and Curry leaves. when mustard seeds start splitting - Add Green chili paste and Garlic. Cook for 5 mins on low flame. |

2. Now add little Turmeric powder and mix well |

3. Add mashed boiled potatoes, salt, and coriander leaves. Mix well. and keep mixing and cooking for around 5-10 mins on medium flame. |

4. Cut bread loaf into pieces. Spread some butter. Spread Green chutney and Tamarind chutney (optional) and then some prepared mixture. |

5. Grate cheese on top and bake for 3-4 mins on 180°C till the bread becomes a little crispy. |

6. Garnish with fried green chilies and dry garlic chutney. |
